SWEET AND SPICY ORANGE BEEF
Here’s a welcome treat after a hard workout when you’re hankering for something sweet but healthful. This goes nicely with cooked carrots and peas.
Yield: 3 Servings
| 1 cup uncooked rice 1 pound extra-lean ground beef 1/4 cup orange marmalade 1/4 teaspoon red pepper flakes or a few dashes cayenne pepper

Optional mix-ins: cooked peas, diced celery, green peppers, pineapple chunks.
1. Cook rice according to package directions.
2. In a skillet, cook the beef until browned; drain fat.
3. To the beef, add the marmalade, red pepper flakes, and cooked rice. Mix well. Add mix-ins as desired.
